Recipe Ingredients for Spicy chickpea-potato stew

30 oz Garbanzos
3/4 c water
1 T olive oil
1 Onions
3 cloves garlic, minced
1 jalapeno pepper, minced
1 t ground cumin
1/4 t turmeric
12 oz tomatoes
16 oz potatoes

Recipe Directions for Spicy chickpea-potato stew

  1. puree 3/4 cup of chickpeas with water, and set aside

  2. heat oil and saute garlic, onions, and jalapenos till onion lightrly browned.

  3. Add cumin and turmeric, stirring to distribute evenly

  4. add tomatoes and reserved chickpea puree, bringing to boil

  5. add potatoes

  6. reduce heat and cook till potatoes almost done

  7. add remaining chickpeas.

  8. simmer till potatoes are done and stew is heated through
