Recipe Ingredients for Spicy Chickpea Burgers (V)

6 oz cooked chickpeas , drained well if canned
2 oz breadcrumbs
1 oz onion, finely chopped
1 garlic clove
1 egg, beaten
1 salt and pepper
1/2 teaspoon curry powder
1 tablespoon parsley, chopped
1 tsp olive oil
4 oz (wholemeal pitta) bread
2 tablespoons mango, chutney
2 tablespoons yoghurt, plain

Recipe Directions for Spicy Chickpea Burgers (V)

  1. Start by sauteeing the onion and garlic in a little olive oil until softened and coloured.

  2. In a food processor whizz the drained chickpeas until they resemble breadcrumbs.

  3. Add the cooked onion/garlic, some chopped parsley, the wholemeal breadcrumbs, seasoning and enough beaten egg to bind everything together.

  4. Make into 4 small patties and dab into the curry spices.

  5. Cook in a little more olive oil for 4 or 5 minutes each side.

  6. When cooked, serve inside half a pitta bread and dress with the mango chutney and plain yoghurt
