A spicy, low carb vegetable soup to use as a nice change from salad for your main dish at lunch.

Recipe Ingredients for Spicy Chicken-Vegetable Soup

1 cup, chopped or diced Chicken, Breast, Meat Only
3 carrot Carrots
1 stalk, medium (7-1/2" - 8" long) Celery
15 oz Mild Diced Tomatoes and Green Chilies
15 oz Cut Green Beans
1 medium raw Leeks
1 tsp Parsley, Dried
2 cloves, raw Garlic
4 tbsp Chicken Flavor Bouillon Granulated
8 cup (8 fl oz) Water
1 tsp Salt, Table
1 tsp Pepper, Black
15 oz Old El Paso Sauce Enchilada Mild

Recipe Directions for Spicy Chicken-Vegetable Soup

  1. Bring water to boil.

  2. In the meantime, cut up all the vegetables into small cubes.

  3. Cut the chicken into 1cm cubes.

  4. Add the vegetables and garlic and stock and boil on high heat for 5 minutes, reduce heat and simmer for 15 minutes.

  5. Add chicken and bring to boil for 2 minutes, then reduce heat and simmer for 20 minutes or longer.

  6. Soup is ready when all ingredients have sunk to the bottom.
