Tacos stuffed with spicy chicken, topped with lime-cilantro slaw and avocado

Recipe Ingredients for Spicy Chicken Tacos with Lime Cilantro Slaw and Avocado

16 oz chicken breast
1 jalapeno pepper
1/4 cup diced onion
1/4 cup diced red bell pepper
1 tbsp cumin
1 clove garlic
2 corn tortillas
8 1/2 oz shredded cabbage
2 tbsp lime juice
1/4 cup chopped cilantro
1 avocado

Recipe Directions for Spicy Chicken Tacos with Lime Cilantro Slaw and Avocado

  1. Preheat pan at medium heat.

  2. Spray with cooking spray.

  3. Add diced garlic, jalepeno, red bell pepper and onion. Saute 2-3 minutes.

  4. Add 1/2 cup water and cumin. Continue to stir.

  5. Slice chicken breasts into strips. Add to mixture.

  6. Lower heat and cover. Let simmer 2-3 minutes.

  7. Put shredded cabbage, cilantro and lime juice in mixing bowl. Mix well. Add salt to taste.

  8. Heat corn tortillas in microwave 30 seconds.

  9. Fill tortillas with coleslaw mixture.

  10. Remove chicken from heat. Add to tortillas.

  11. Top with chopped avocado.
