I have changed this recipe to bring more flavours out of the spices. I have also removed the salt from the original recipe. (original recipe had 876mg per serve)

Recipe Ingredients for Spicy Chicken & Sweet Potato Stew

1 tsp olive oil (extra virgin)
1 onion, chopped - I use spanish onion
4 cloves garlic, minced
450 g sweet potato, peeled and cubed
1 red bell pepper (capsicum), seeded and cubed
450 g chicken breast, cubed (skinless)
800 g diced tomatoes (or just over - 28oz)
1 1/2 cup water
1 tsp ground cumin
1/4 tsp ground cinnamon
1 tsp cocoa powder
1 tsp chili powder
1 tsp dried oregano
2 g ginger (about a thumb size, peeled and sliced)
1 tbsp chili, diced
1 1/2 tbsp all-purpose flour
2 tbsp water
1 cup frozen corn
450 g kidney beans, rinsed and drained

Recipe Directions for Spicy Chicken & Sweet Potato Stew

  1. The first thing I do is in a mortar & pestle ground the cumin, then add oregano, chili powder, cocoa powder, cinnamon & mix well. Add the sliced ginger, mix until smooth. Add the diced chili & grind until smooth.

  2. Heat olive oil in a large pot over medium heat. Stir in onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes.

  3. Add spices from mortar & heat through. Then add the chicken pieces and cook until lighty browned on all sides (about 5 mins)

  4. Stir in sweet potato, bell pepper, tomatoes, and 2 cups of water. Increase heat to medium-high and bring to a boil.

  5. Dissolve flour in 2 tablespoons water, and stir in to boiling stew.

  6. Reduce heat to medium-low, cover, and simmer until the potatoes are tender but not mushy, 10 to 20 minutes. Stir the stew occasionally to keep it from sticking.

  7. Once the potatoes are done, stir in corn and kidney beans. Cook a few minutes until hot.

  8. Serve on a bed of jasmine rice.
