Recipe Ingredients for Spicy Chicken Stuffed Peppers

1/2 cup White Rice
2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
0.25 cup, sliced Onions
9 oz Fresh Boneless Skinless Chicken Breasts

Recipe Directions for Spicy Chicken Stuffed Peppers

In a food processor, chop slightly frozen chicken tenders. Combine with chopped onion, rice, egg and juice from Ro-Tel tomatoes with peppers. Salt and pepper to taste. Stuff two large green peppers. Use remaining Ro-Tel tomatoes as a topping on each pepper. Bake at 350 degrees for 1 hour.
