Recipe Ingredients for Spicy Chicken Stir Fry

1 chicken breast, cut into bite size pieces
2 tablespoons olive oil
1 large onion, cut into thick pieces
1 large green pepper, cut into thick pieces
1 large red pepper, cut into thick pieces
2 medium zucchini, cut into thick slices
2 tablespoons garlic, minced
1 teaspoon black pepper, cracked
1/2 teaspoon salt
1/4 teaspoon cayenne pepper

Recipe Directions for Spicy Chicken Stir Fry

  1. Heat pan. Add oil and heat a minute longer. Add chicken, garlic, salt & pepper and saute for 5 minutes.

  2. Add zucchini and saute 3 minutes.

  3. Add onions and peppers and saute 5-7 minutes until vegetables are crisp tender. Adjust seasonings to taste.

  4. Serve with rice or quinoa.
