Spicy Chicken Stir Fry with Peanut Sauce

Recipe Ingredients for Spicy Chicken Stir Fry with Peanut Sauce

1 lb chicken
1/2 c Peanut Butter
1/2 c Water
2 tbsp Soy Sauce
1 tbsp Rice Vinegar
1 tbsp Brown Sugar
2 tbsp Peanut or Vegetable Oil
2 cloves Garlic, Minced
1 tsp Crushed Red Peppers
3 cup Broccoli

Recipe Directions for Spicy Chicken Stir Fry with Peanut Sauce

  2. In a small bowl combine peanut butter, water, soy sauce, rice vinegar, and sugar. If the peanut butter is hard and will not combine easily, microwave for 30 seconds to soften. Mix thoroughly and set aside to marinate.

  5. Using a wok or a large skillet, heat oil over high heat and add garlic and pepper. Allow to sizzle for 30 seconds then add chicken. Stir-fry until cooked thoroughly, approximately 5 minutes.

  8. After chicken is firm and white, add broccoli and cook until bright green. Stir in the peanut sauce mixture and reduce heat. Stir constantly until mixture is smooth and the broccoli is tender but still crisp. Voila!
