Spicy homemade soup, my recipe that I adapted from several others. Perfect to make in bulk and store for easy re-heating. It's a family favorite. Modify with your favorite soup ingredients.

Recipe Ingredients for Spicy Chicken Soup

448 grams Oven Roasted Rotisserie Chicken, 3.25-3.75 lb.
32 oz Chicken Stock
96 oz water
2 cup Onions
4 cup Rice, White, Long-grain, Regular, Cooked
30 pieces Carrots Baby Cut
2 oz Creole Seasoning
16 oz Mild Diced Tomatoes and Green Chilies
16 oz raw Pork Cubes For Kabobs
2 oz Extra Virgin Olive Oil

Recipe Directions for Spicy Chicken Soup

  1. Heat stock pot and pour in olive oil.

  2. When the oil is hot dump in 2 cups of trinity (chopped onion, bell pepper, celery) and sauté until the onions are becoming clear.

  3. Debone the chicken (extremely easy if using cooked rotisserie chickens)

  4. When onion mix is sautéed pour in Ro*tel. The hotter you like your food, the hotter the Ro*tel should be.

  5. Pour in the chicken stock (you can use the low sodium if you want, or if you make your own at home, more the better!)

  6. Bring to a boil and add in the chicken and seasoned pork.

  7. Cover and let simmer. The longer, the better! Throw in carrots in the last half hour to an hour before serving.

  8. You can add whatever other vegetables you enjoy in a soup and substitute noodles for the rice.

  9. We tend to eat and let it continue to cook, simmering for several hours, and then store in containers or Ziploc bags in the fridge. This allows us to pull out serving sized portions to take for lunch or eat at home after a late night at work.
