This is so good on a cold day...it make a big pot of soup and it freezes well. It is great topped with sour cream, green onion and tortilla chips (I use Fat Free Yogurt (instead of sour cream and a couple of baked chips) 10 servings at 2 cups each serving...

Recipe Ingredients for Spicy Chicken Soup

4 cups of water
4 chicken breast
1/4 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 tablespoon parsley
1/2 tablespoon onion powder
6 cups of low sodium chicken broth
2 tablespoons olive oil
1 onion
2 cloves garlic
8 oz salsa
8 oz diced tomatoes
8 oz whole tomatoes
1 can tomato soup
8 oz corn
8 oz kidney beans
16 oz tomato paste

Recipe Directions for Spicy Chicken Soup

  1. In a large pot over medium hea, combine water, chicken, salt, pepper garlic powder, parsley, onion powder and chicken stock. Bring to a boil then reduce heat and simmer 1 hour, or until chicken juices run clear.

  2. In a large pot over medium heat, cook onion and garlic in olive oil until slightly browned. Stir in salsa diced tomatoes, rotel, tomato soup, chili powder, corn beans, shredded chicken and broth. Simmer 30 minutes...
