Spicy Chicken Soup Recipe

Recipe Ingredients for spicy chicken soup

4 cups chicken breast
6 cups water
15 oz Beans, Kidney, Mature Seeds, Sprouted
15 oz diced tomatoes
1 diced yellow onion
1/2 cup diced jalapeno
1 diced bell pepper
1 cup celery
3 carrots
1 garlic clove
2 tbsp cumin
1 tsp cayenne

Recipe Directions for spicy chicken soup

  1. In a large soup pan, boil 2 large chicken breasts (I prefer bone-in for this and skinless) in water to cover.

  2. Chop all the carrot and half the celery into large chunks (roughly 2 inch pieces) and add to boiling chicken water. Salt and pepper to taste (I use a splash of soy sauce and a giant dash of hot sauce).

  3. Gently boil until the chicken is fully cooked (an hour or so); allow the water to reduce.

  4. Allow to cool. Remove chicken and pull from bone. You can chop into chunks or shred, set aside.

  5. Cut cooked carrots into bite size pieces and set aside.

  6. Add the can tomatoes, beans, chopped onion, chopped peppers, cumin, cayenne, and chopped garlic to the reduced stock in your pan. Add water to fill an inch or so from the top.

  7. Simmer on low until onions are clear. Check your spices by taste.

  8. Add chicken and carrots. Simmer on the lowest setting until you just can't stand it(about 25 minutes but less is OK too)!

  9. Serve with sour cream, shredded cheese, tortilla chips, more sliced peppers and onions, or whatever you like!
