Recipe Ingredients for Spicy Chicken Quinoa

10 1/10 grams Olive Oil
1 tbsp Paprika
2 serving Ground Cumin Seed
1 tsp Garlic Powder
1 tsp Turmeric, Ground
1 cup Quinoa
16 oz Old El Paso Salsa Thick N Chunky Make Mine Medium
1.33 cup Broth
2 cup, chopped or diced Chicken, Breast, Meat Only
16 oz Bell Peppers
5 serving, raw Cilantro
6 fl oz Lime Juice, Canned Or Bottled, Unsweetened
0.5 cup, diced Ham, Sliced, Extra Lean

Recipe Directions for Spicy Chicken Quinoa

  1. Heat oil in large saucepan over medium-high heat.

  2. Add paprika, cumin, garlic powder, and turmeric and cook, stirring, for 30 seconds until aromatic.

  3. Add the rice, salsa, and broth. Bring to the boil. Reduce heat to low and cook, covered, for 18 minutes or until quinoa is opaque.

  4. Add the chicken, peppers, ham, lime juice and cilantro, and cook, stirring, for 2-3 minutes or until heated through. Remove from heat
