Recipe Ingredients for Spicy Chicken and Peanut Stir-Fry

1 tablespoon vegetable oil
1 tablespoon red curry paste
2 cloves garlic, sliced
1 tablespoon grated fresh ginger
3 spring onions, sliced
1 pound chicken breast fillets, sliced
1 carrot, sliced
1 red bell pepper, sliced
1 bunch broccoli, roughly chopped
1/2 cup Thai sweet chili sauce
2 tablespoons Thai fish sauce
2 tablespoons lime juice
1/2 cup roasted peanuts

Recipe Directions for Spicy Chicken and Peanut Stir-Fry

  1. Heat oil in wok.

  2. Add red curry paste, garlic, ginger, and spring onions and stir-fry for three minutes.

  3. Add the chicken and stir-fry for 5 minutes or until browned.

  4. Add the vegetables and 2 tablespoons water. Cook for five minutes.

  5. Combine the sweet chili sauce, fish sauce, lime juice, and peanuts. Pour the mixture into the wok and bring it to a boil.

  6. Remove from heat, top with coriander leaves, and serve.
