Spicy Chicken Pasta Recipe

I use Orzo pasta... looks like large rice. The vegetable juice I use is V8 Spicy. You can eliminate the red pepper flakes if you use V8 Spicy.

Recipe Ingredients for Spicy Chicken Pasta

12 1/2 oz Chicken Breast, cooked
2 tablespoons olive oil
1 cup tomatoes, diced
1/2 cup onions, chopped
1/2 green pepper, chopped
1/2 cup celery, chopped
3 cloves garlic
1/2 tsp ground coriander
1 tsp cumin
1 tsp basil
1/2 tsp oregano
1/4 tsp red pepper flakes
3/4 cup vegetable juice, spicy type
1 tablespoon chili powder
1 tsp paprika
1/2 lb pasta, dry

Recipe Directions for Spicy Chicken Pasta

  1. Boil enough water to cook the pasta. The small orzo pasta will be done in about 10 min.

  2. Cook the onions, celery & peppers till they are limp. Add the garlic and stir till that is golden. Add the chicken and stir till that is a bit brown. Add the spices and stir, then the tomatoes, and then the vegetable juice. Turn to simmer until the pasta is done.

  3. When the pasta is done, drain and add to the chicken mixture.
