Recipe Ingredients for Spicy Chicken Over Rice

1/2 lb skinless chicken breast, diced
1 cup long-grain rice
1 onion, diced
14 1/2 oz. chopped tomatoes
1 tsp ground coriander
1 tsp ground cumin
2 tsp curry powder
1 tbsp olive oil
2 tsp sugar

Recipe Directions for Spicy Chicken Over Rice

  1. Heat 1/2 the oil in a frying pan and add the diced chicken.

  2. Cook until browned and put aside.

  3. Heat the rest of the oil in the frying pan and add the onions, coriander, cumin and curry powder.

  4. Cook until the onion is transparent.

  5. Add the chicken and the canned tomatoes and simmer on low heat for 10 minutes.

  6. Meanwhile prepare the rice.

  7. Add the sugar to the chicken mixture and simmer for 2 minutes.

  8. Serve over the rice or mix together and serve.
