Recipe Ingredients for Spicy Chicken Fried Rice with Peanuts

1/4 cup lite soy sauce
1 tbsp dark brown sugar
1 tsp dark sesame oil
3/4 tsp crushed red pepper
2 T canola oil
2 cups diced red bell pepper
1 cup diced onion
1/4 c sliced green onions
2 T minced fresh ginger
2 garlic cloves
3 cups brown rice
2 cups chicken breast
8 oz sliced water chestnuts
1/3 cup dry roasted peanuts

Recipe Directions for Spicy Chicken Fried Rice with Peanuts

  1. Combine first ingredients in a small bowl and stir well with a whisk.

  2. Heat canola oil in a large nonstick skillet over medium-high heat. Add bell pepper, diced onion, and 2 T green onions to pan; stir fry 3 minutes or until tender.

  3. Add ginger and garlic; stir fry 1 minute.

  4. Add rice, chicken, and water chestnuts; stir fry for 5 minutes or until thoroughly heated, stirring gently.

  5. Add soy sauce mixture; cook 2 minutes, tossing gently to coat.

  6. Sprinkle with remaining 2 T green onions and peanuts.

  7. Yields 5 servings.
