Used in Chicken Tacos, burritos, etc. I found it on a website and make it all the time. I skip the taco shells or tortillas and serve it over spinach or on romaine for a salad.

Recipe Ingredients for Spicy Chicken Filling

32 oz chicken breast, meat only
4 cloves garlic, minced
4 peppers
1 onion, chopped
6 small tomatoes, chopped
2 teaspoons oregano
1/2 teaspoon salt
1 cup chicken broth

Recipe Directions for Spicy Chicken Filling

  1. Boil chicken breasts until done, drain and set aside to cool.

  2. Shred the chicken with two forks or in a food processor.

  3. Remove stems and seeds from Jalapenos and then finely chop.

  4. Saute (over medium heat) chopped onion, jalapenos and garlic until soft. (I saute without the oil - you'll need to adjust your nutritional data if you use oil).

  5. Add the chopped tomatoes, chicken, oregano and salt.

  6. Pour enough chicken broth to just cover the chicken and simmer over medium-low until most of the liquid has evaporated.
