A spicy fajita mix with chicken and tomatoes. Low fat. I served with hemp tortillas, low fat cheese, and sour cream.

Recipe Ingredients for Spicy Chicken Fajitas

3 cups frozen bell peppers mixed
1 cup frozen onions
1 tsp chili powder
1/2 tbsp garlic powder
1/2 tsp cayenne
2 servings Creole seasoning
1/2 tsp curry powder
8 oz boneless skinless chicken breast
1/2 cup diced tomatoes and chilies

Recipe Directions for Spicy Chicken Fajitas

  1. Chop chicken and began cooking in spayed pan over medium heat. I add a bit of water as well to assist it in the cooking without becoming dry.

  2. Add peppers and onions and cook until mostly tender.

  3. Add all spices and cook until all is done and tender; mixture should be fragrant.

  4. Add tomatoes and heat until simmer, then remove from heat.

  5. Let sit for 2-5 mins before serving.
