Recipe Ingredients for Spicy Chicken Chili

1 tsp. olive oil
1 lb. skinless, boneless chicken thighs, cut into bite-sized pieces
1 c. chopped onion
3/4 c. chopped red pepper
1/2 c. chopped green pepper
2 garlic cloves, minced
3 c. reduced-sodium chicken broth, divided
21 oz. white beans, drained
1 tbsp. chili powder
1 tsp. dried oregano
1/2 tsp. cumin seeds
1/2 tsp. salt
1/4 tsp. pepper
28 oz. diced tomatoes, drained
4 1/2 oz. diced green chilis
6 tbsp. shredded sharp cheddar cheese

Recipe Directions for Spicy Chicken Chili

  1. Heat oil in a large non-stick skillet or pot over medium-high heat. Add chicken; saute 5 minutes or until browned. Add onion, bell peppers & garlic; saute 3 minutes. Stir in 1/2 c. broth, scraping skillet to loosen browned bits.

  2. Add remaining broth, beans, and next 7 ingredients. Cover and cook on low setting 30-40 minutes until flavors are combined and chicken is tender.

  3. Ladle chili into bowls (1-1/2 cups per serving) and top with 1 Tbsp. shredded cheese.
