Recipe Ingredients for Spicy Chicken & Avocado Salad

2 cups chicken, cooked and shredded
1/4 cup light mayonnaise
1 avocado, half mashed and half chopped
2 tbsp lime juice
2 tbsp cilantro, minced
2 green onions, diced
1/2 red pepper, diced
2 tbsp chipotle pepper

Recipe Directions for Spicy Chicken & Avocado Salad

  1. mash 1/2 of avocado, mix with light mayo, lime juice, and chipotle pepper.

  2. Add cilantro, green onions, chicken and rest of avocado, chopped, to mayo mixture.

  3. Chill for 1 hour before serving.
