Recipe Ingredients for Spicy Cheddar Cheese and Turkey Soup with beans

5 tablespoons butter
1/4 cup flour
3 1/2 cups chicken broth
2 1/2 cups 2% milk
2 teaspoons Worcestershire sauce
8 ounces cheddar cheese (2 cups)
24 ounces salsa
10 ounces turkey, diced
12 ounces corn
12 ounces black beans

Recipe Directions for Spicy Cheddar Cheese and Turkey Soup with beans

  1. 1. In a large frying pan cook flour and butter together until flour turns amber in color. Remove from heat and let cool for 3 to 4 minutes.

  2. 2. Add about 1 cup of broth and whisk until flour mixture dissolves.

  3. 3. In a large pot bring remainder of chicken broth to a boil, then whisk in flour mixture and continue cooking until soup begins to thicken.

  4. 4. Add milk* and reduce heat to a simmer.

  5. 5. Stir in cheese, whisking until melted.

  6. 6. Stir in salsa, turkey and corn and beans

  7. 7. Stir regularly and continue to simmer until desired thickness is reached.

  8. *Note: If possible, carefully bring milk to a boil in the microwave then add to pot.

  9. Yield: about 8- 12 ounce servings
