A spicy and healthy way to use up those sunday leftovers

Recipe Ingredients for Spicy Cauliflower and Chicken curry

1 onion, diced
250 g cauliflower
140 g chicken, cooked, diced
400 g tinned tomatoes, chopped
2 tbsp curry powder
1 tsp chilli powder
150 ml water
1 tbsp reduced fat sour cream

Recipe Directions for Spicy Cauliflower and Chicken curry

  1. Soften the onion in low cal cooking spray for 5-10 mins.

  2. break the cauliflower into florets and quarter.

  3. add the cauliflower to the pan and continue to cook for 3 mins.

  4. Add the curry and chill powder and cook for a further 2 mins.

  5. Add the tinned tomatoes, chicken and water and stir to combine.

  6. Simmer for around 15mins or until the cauliflower is cooked and the sauce has thickened.

  7. Stir in soured cream and simmer for a further 2 mins

  8. Serve with brown rice and green veg of your choice
