Spicy Carrot and Chickpea Tagine with Turmeric and Cilantro

Recipe Ingredients for Spicy Carrot and Chickpea Tagine

4 tbsp Olive Oil
1 medium (2-1/2" dia) Onions
4 clove Garlic
1 tsp Turmeric, Ground
2 tsp Cumin Seed
1 tsp Cinnamon, Ground
1/2 tsp Cayenne
1/2 tbsp Pepper, Black
1 tbsp Honey, Strained Or Extracted
4 medium Carrots
28 oz Garbanzo Beans
1 tsp Sea Salt
1 fruit (2-1/8" dia) Lemons

Recipe Directions for Spicy Carrot and Chickpea Tagine

  1. Heat oil in tagine or heavy-based casserole dish. Add onion and minced garlic and sauté until soft.

  2. Grind turmeric, cumin, cinnamon, cayenne, black pepper, if not already and add to pot. Add honey and carrots and enough water to cover the base of the tagine and over with a lid. Cook gently for 10-15 minutes.

  3. Toss in the chickpeas and ensure that there is still enough liquid at the base of the tagine. Cover and cook gently for another 5-10 minutes.

  4. Season with salt and sprinkle with rosewater and cilantro leaves over the top.

  5. Serve with lemon wedges.
