an alternative to carrot cake, this bread is made with wheat germ, soy flour and whole wheat flour. applesauce is substituted for oil and eggs.

Recipe Ingredients for spicy carrot bread

1 cup whole wheat flour
1/2 cup wheat germ
1/2 cup soy flour
3/4 cup golden brown sugar
1/4 cup dark brown sugar
1/2 tsp salt
1 1/2 tsps baking soda
3 tsps cinnamon
1 tsp nutmeg
1 tsp ginger
1 tsp clove
1/4 tsp cardamom
1 cup shredded carrot
1 cup applesauce
2 tsps vanilla
1/2 cup raisins

Recipe Directions for spicy carrot bread

  1. preheat oven to 350F

  2. mix dry ingredients (whole wheat flour, wheat germ, soy flour, sugar, baking soda, salt, cinnamon, ginger, cloves, nutmeg, cardamom)

  3. in another bowl, mix the wet ingredients (carrot, applesauce, vanilla)

  4. mix wet ingredients into dry ingredients until moistened

  5. fold in raisins

  6. grease an 8 1/2 x 4 1/2 loaf pan with butter, margarine or non-stick spray

  7. pour batter in loaf pan. bake for about 55-60 minutes until dark brown, or until a toothpick inserted in the center comes out clean (this time may vary depending on your oven)

  8. Let cool in the pan on a rack for at least 10-15 minutes before unmolding to cool completely on the rack
