Yummy stir-fry! To make it vegan- use vegetable broth instead. (I only had chicken on hand)

Recipe Ingredients for Spicy Cabbage-Tempeh Stir-Fry

2/5 head green cabbage
6 tbsp low sodium chicken broth
2 tbsp low-sodium soy sauce
1 tsp cornstarch
2 tsp olive oil
4 oz tempeh
2 garlic cloves, minced
1/2 tsp crushed red pepper
1 1/4 cup cremini mushrooms, sliced

Recipe Directions for Spicy Cabbage-Tempeh Stir-Fry

  1. Slice cabbage into bite-sized pieces.

  2. Combine broth, soy sauce, and cornstarch in a small bowl; stir with a whisk until smooth. Set aside.

  3. Heat 1 tsp oil in a medium nonstick skillet over medium-high heat. Add tempeh, and stir-fry 4 to 5 minutes or until golden. Remove from pan; set aside.

  4. Heat remaining 1 tsp oil in pan. Add garlic, red pepper, broccoli, and mushrooms, and stir-fry 3 minutes or until broccoli is tender. Add broth mixture; bring to a boil, and cook 2 to 3 minutes or until thickened. Add tempeh, and cook 1 minute or until thoroughly heated.
