Recipe Ingredients for Spicy butternut squash soup

2 onions, chopped
900 g butternut squash, diced
2 pints low fat chicken broth
1 tbsp cumin
1 tbsp ground coriander

Recipe Directions for Spicy butternut squash soup

  1. Sweat the onion in PAM/ Fry Light or water until soft.

  2. Add the cumin and coriander, stir around and let them cook for a few minutes.

  3. Add the stock and butternut squash, bring to a simmer. Add seasoning now if required. Simmer until the squash is soft.

  4. Liquidise and return to the pan and warm through, if required.

  5. Adjust seasoning if necessary.
