When the temperatures are starting to go down and you feel just that tiny bit of a nip in the air, that's when the butternut squashes will be coming into season.

Recipe Ingredients for Spicy Butternut Squash and Haricot or Chickpea Soup

650 g Butternut Squash
2 teaspoons Cumin
1 Onion, chopped
300 g carrots
1 teaspoon Cinnamon
2 Garlic Cloves, minced
400 g Chopped Tomatoes
1000 ml water
235 g haricot beans
1 salt and pepper to taste

Recipe Directions for Spicy Butternut Squash and Haricot or Chickpea Soup

  1. Fry the onion and carrots for 3-4 mins at a high temp until brown. Add a little of the stock if needed to stop them sticking.

  2. Add a little bit of chilli pepper, garlic and spices, stir and cook for 15 seconds.

  3. Add the butternut squash and stir to coat in the spicy mix. Add 3 tablespoons of stock, cover and leave to cook for 5 mins over a medium heat.

  4. Add tomatoes, remaining stock and half the beans, season well, stir, bring to the boil, then cover and cook over a medium heat for approx 20 mins or until the squash is tender.

  5. Let it cool a little, blend, and then add the remaining beans. Bring back up to heat and serve.
