Recipe Ingredients for Spicy butternut and coconut soup

4 cup cubed Squash Butternut
1 large Onions
1 tbsp Olive Oil
400 grams Blue Dragon Light Coconut Milk
1 tsp Curry Powder
500 grams Vegetable Stock

Recipe Directions for Spicy butternut and coconut soup

  1. Soften diced onion in oil in a heavy based saucepan.

  2. Add curry powder (according to your taste) and cook for 2 mins.

  3. Add coconut milk, squash and stock. Simmer until squash is cooked (around 20mins).

  4. Liquidize.

  5. Season with black pepper.
