Recipe Ingredients for Spicy Broccoli Frittata

4 oz reduced fat cream cheese
8 eggs
2 tbsp water
1 tbsp dijon mustard
2 roma tomatoes
1 tbsp Light Butter Salted
1 tsp crushed red pepper flakes
250 g shredded mozzarella cheese

Recipe Directions for Spicy Broccoli Frittata

  1. Preheat oven to 350. Whisk cream cheese in bowl. Gradually add eggs, water, and mustard, whisk til smooth.

  2. Thinly slice tomatoes

  3. Place butter and pepper flakes in skillet. heat over medium heat 1-2 minutes or until pepper flakes begin to brown. Add broccoli immediately, cook 1-2 minutes.

  4. Pour eggs into skillet, cook and stir 3-4 minutes or until eggs are almost set. Top evenly with half the chese, the tomato slices and sprinkle with remaining cheese.

  5. Bake 12-15 minutes or until center of egg mixture is set but still moist. Remove from oven and let stand 5 minutes. Serve immediately.
