Makes 3 servings



slice eggplant into at least 10 1/4 inch slices. Lay out on platter and salt to bring out water. Beat eggs in one prep bowl, pour bread crumbs in second prep bowl. Heat skillet to medium heat use 1 teaspoon olive oil for every 3 to 4 eggplant rounds cooked. Dredge egg plant in egg and then in bread crumbs, fry both sides in olive oiled skillet. Preheat oven to 400 degrees. Spread each eggplant round on cookie sheet, mix sour cream milk, onion and spices. Spread a layer on each round, top with thin sliced circle of mozzarella, and bake for 3-5 minutes in oven, until cheese is melted.

5 ounces part skim mozzarella
2 tablespoons grated parmesan
3 teaspoon olive oil
1/4 cup fat-free sour cream

1/8 teaspoon cayenne
1/8 teaspoon garlic
