Spicy variation of black-eyed peas and tomatoes. Great served over rice or with corn bread.

Recipe Ingredients for Spicy Black-Eyed Peas & Tomatoes

1 3/10 cup Black Eyed Peas, Organic
1 1/2 cup Tomatoes
1 small Onions
1 medium raw Bell Pepper Red
2 1/2 oz Mexican Style Four Cheese
2 1tsp Olive Oil
1 tsp Cumin
1 tsp Chili Powder
1 serving Marie Sharp's Grapefruit Pulp Habanero Pepper Sauce
1 serving, raw Cilantro
3/10 packet SPLENDA No Calorie

Recipe Directions for Spicy Black-Eyed Peas & Tomatoes

  1. Heat oil in large skillet and saute diced onion and bell pepper. Add chili powder, cumin, and hot sauce and saute another minute. Add black-eyed pea and, tomatoes (including juice) and cook another few minutes. Add cilantro and remove from heat.

  2. Pour mixture into small greased casserole dish and top with cheese. Bake at 375 F for 25-30 minutes, until cheese is browned and mixture is bubbly. Note: If you don't have a good hot sauce, a little ground cayenne will suffice -- or simply omit if you don't want the dish to be very spicy.
