Spicy black beans, tomatoes, and salsa served over brown rice.

Recipe Ingredients for Spicy Black Beans & Rice

2 cloves minced garlic
2 tbsp extra virgin olive oil
15 oz Black Beans
14 1/2 oz Tomatoes
1/2 cup Chichi's Salsa
1/4 tsp cayenne pepper
2 oz Extra Sharp Cheddar Cheese
1 cup Brown Rice

Recipe Directions for Spicy Black Beans & Rice

  1. Prepare brown rice as packaging instructs.

  2. Cook garlic in EVOO in saucepan until tender, but not brown. Add beans, undrained tomatoes, salsa, and cayenne pepper. Bring to boiling, reduce heat. Simmer uncovered for 15 minutes.

  3. Serve sauce on top of rice, sprinkle on cheddar cheese (optional).
