Recipe Ingredients for Spicy Black Bean Soup

1 spray of cooking spray
1 medium onion, chopped
4 garlic clove(s), minced
45 ounce of black beans, undrained
1/2 tsp red pepper flakes
1 tsp of cumin
1 tsp of chili pepper
14 ounce of chicken broth
10 ounce of tomatoes with green chiles
11 ounce of corn

Recipe Directions for Spicy Black Bean Soup

  1. Coat bottom of large stock pot with cooking spray.

  2. Add onions and garlic. Cook until onions are soft but not browned.

  3. Add one (15 ounce ) can of beans, onion mixture, red pepper and cumin to blender. Blend until smooth.

  4. Add mixture to stock pot.

  5. Take second (15 ounce) can of beans and chicken broth and add to blender. Blend until smooth. Add mixture to stock pot.

  6. Take last (15 ounce) can of beans, unblended, and add to stock pot with Rotel and corn.

  7. Cook over high heat for 20-25 minutes.

  8. 1 serving is approximately 1-1/2 cup
