A beautiful soup, especially with a little cilantro added for color. Wonderful on a cold day.

Recipe Ingredients for Spicy Black Bean soup

45 oz. black beans, undrained
1/2 tsp. red pepper flakes
1 tsp. ground cumin
1/2 tsp. onion powder
1/2 tsp. garlic powder
14 1/2 oz. fat-free chicken broth
10 oz. canned tomatoes with green chilies
30 oz. canned yellow corn, drained
3 tbsp. chopped cilantro

Recipe Directions for Spicy Black Bean soup

  1. Place one can of beans in blender, addred pepper flakes, cumin, onion powder, and garlic powder. Cover and blen on high until smooth, about 30 seconds. Pour mixture into stockpot.

  2. Place second can of beans and broth in blender and puree until smooth, add to stockpot.

  3. Stir third can of beans (do not puree), tomatoes with green chilies, and corn into stockpot. Bring to a boil, lower heat to medium heat and simmer for 20 to 25 minutes.

  4. Add some cilantro for color and added flavor when the soup is ready to serve. Yields about 1 1/2 cups of soup per serving.
