Easy to make, might add a small can of green chilis to spice it up a bit!

Recipe Ingredients for Spicy Black Bean Soup

1 tbsp olive oil
1 large onion, finely chopped
4 cloves garlic
6 cups black beans (canned, undrained)
1/2 tsp red pepper flakes
1 tsp cumin
15 oz vegetable broth
10 oz canned tomatoes with green chilies
11 oz canned yellow corn, drained

Recipe Directions for Spicy Black Bean Soup

  1. Coat bottom of a large stockpot with cooking spray. Add onion and garlic and cook, stirring frequently, until onions are soft, about 5 minutes.

  2. Place one can of beans in a blender, blend until smooth. Pour into the stockpot. Repeat with second can of beans.

  3. Stir third can of beans (do not puree first) into the stock pot with remaining ingredients. Bring to a boil, lower heat and simmer for 20 to 25 minutes. Yields about 1 1/2 cups of soup per serving.
