Spicy Black Bean and Quinoa Salad

Recipe Ingredients for Spicy Black Bean and Quinoa Salad

1 cup Quinoa
1 fruit (2-1/8" dia) Lemons
2 oz napolean extra virgin olive oil
3 medium (4-1/8" long) Onions, Spring Or Scallions
2 cup, chopped Peppers, Sweet, Red
2 cup Black Beans, Organic

Recipe Directions for Spicy Black Bean and Quinoa Salad

Cook quinoa and black beans ahead of time. In bowl whisk lime juice, zest, salt, chili powder, chipotle powder and cumin. Add the olive oil and whisk until combined. Add the quinoa and toss. Add the rest of the ingredients and toss ? add cilantro if desired.
