From Cellophane_Star with modification for parmesan cheese in place of nutritional yeast.

Recipe Ingredients for Spicy Black Bean and Quinoa Burgers

2 cups low-fat chicken broth
1 cup quinoa
2 cups black beans
3/4 cup red onion, diced
1/2 cup cilantro
2 garlic cloves, crushed
3 tablespoons olive oil
2 tbsp parmesan cheese, grated
1 tbsp chili powder
1/2 tsp cumin
1/2 tsp salt

Recipe Directions for Spicy Black Bean and Quinoa Burgers

  1. Toast quinoa on skillet (medium-high heat), stirring frequently until it pops.

  2. Remove from heat and rinse in a fine strainer.

  3. Add it to boiling stock, reduce heat and simmer for 15 minutes or until quinoa is cooked.

  4. Put quinoa in bowl to cool.

  5. Once cooled, combine quinoa and all other items in a food processor.

  6. Process until smooth.

  7. Form into 9 patties.

  8. Fry for 4-7 minutes per side or until browned.
