Recipe Ingredients for Spicy Beef Salad

1 lb sirloin steak
2 T apple juice
1 T soy sauce
2 t sugar
1 head lettuce
8 green onions
2 tomatoes
3/4 lb mushrooms
1 clove garlic
1/4 c rice vinegar
2 T soy sauce
1 t gingerroot
1 t sesame oil
1/8 t cayenne pepper

Recipe Directions for Spicy Beef Salad

  1. Cut and discard most of the fat from the beef. Cut the beef with the grain into 2-inch strips, then cut the strips across the gran into 1/8-inch slices. (For easier cutting, partially freeze beef about 1 hour).

  2. To marinate the beef, toss the beef, apple juice, soy sauce and sugar in a glass or plastic bowl. Cover and refrigerate 30 minutes.

  3. Wash the lettuce, and let drain. Peel and cut the mushrooms into slices. Tear or shred the lettuce into bite-size pieces.

  4. Heat the skillet over medium-high heat 1-2 minutes. Add half of the beef to the hot skillet. Stir-fry with a turner or large spoon about 3 minutes, lifting and stirring constantly, until beef is brown. Remove beef from the skillet; drain. Repeat with remaining beef.

  5. Toss the beef and green onions in a large salad or serving bowl. Layer the tomatoes, mushrooms and lettuce on the beef. Cover and refrigerate at least 1 hour but no longer than 10 hours.

  6. Prepare Spicy Dressing. Pour the dressing over the salad, then toss until well coated.

  7. Spicy Dressing: Peel and finely chop the garlic. Shake garlic and remaining ingredients in a tightly covered jar or container.
