This is a simple, yet flavorful, one pan meal. Serve with a nice green salad for a quick mid-week dinner.

Recipe Ingredients for Spicy Beef and Rice

2 cup Mahatma Extra Long Grain Enriched Rice
1 medium (2-1/2" dia) Onions
3/4 cup Tomato Sauce
3 pepper Peppers, Jalapeno
2 fl oz Lime Juice, Canned Or Bottled, Unsweetened
16 oz Beef, Ground, 90% Lean Meat / 10% Fat, Crumbles
1 tbsp Olive Oil
16 oz Tomatoes, Red, Ripe
6 apricots Premium Mediterranean Dried Apricots
6 Green Chilies, roasted, peeled and diced

Recipe Directions for Spicy Beef and Rice

  1. Brown rice in Olive Oil.

  2. Add diced onion.

  3. Add ground beef and cook until well done.

  4. Season with salt and pepper (optional)

  5. Add remaining ingredients and 2 cups water, continue cooking until rice is cooked thoroughly.
