Recipe Ingredients for Spicy Beef Barley Soup

12 oz Beef, Top Sirloin
1 medium raw Bell Pepper Red
32 fl oz Beef Broth
1 cup Pearled Barley
6 clove Garlic
1 pepper Pepper, Serrano
2 cup, diced Celery
1 cup, chopped Carrots
1/2 tsp Thyme, Fresh
1 tbsp Rosemary, Fresh
0.5 oz Oregano
2 cup chopped raw Grape Tomatoes
0.5 tbsp Original Natural Buttery Spread

Recipe Directions for Spicy Beef Barley Soup

  1. Add broth and 5 cups water to large soup pot. Turn heat on medium. Toss in leftover beef.

  2. Chop Fresh Oregano, Thyme and Rosemary and toss into broth.

  3. Heat 1/2 tbsp. earth balance in pan, mince garlic and serrano pepper, chop carrots, celery and peppers and toss into heated butter. Saute veggies on medium for 6-8 minutes or until garlic starts to brown.

  4. Throw vegetable mixture into soup pot with broth. Add rinsed pearl barley as well.

  5. Chop up half of the tomatoes and puree the other half in a food processor or blender until frothy. Put tomatoes into soup.

  6. Cover and cook for an hour and a half on medium-low, until the barley is thoroughly cooked.

  7. Add cracked pepper and sea salt to taste.

  8. Can be served to more people as an appetizer.
