Recipe Ingredients for Spicy baked fish

16 oz. cod (4 boneless, skinless fillets)
4 tbsp. unsalted butter, softened
2 tsp minced canned chipotle chiles in adobo (can use more if you like it spicier.)
1/4 tsp orange zest
2 tbsp orange juice
2 garlic cloves, minced
16 oz black beans, drained and rinsed
2 cups frozen or canned corn
1/3 cup chopped fresh cilantro

Recipe Directions for Spicy baked fish

  1. Adjust oven rack to lower-middle position and heat oven to 450. Pat fish dry with paper towels and season with salt and pepper. Using fork, beat butter, 1 tsp chipotle, orange zest, hal of garlic, tsp salt and tsp pepper in small bowl until combined. Spread butter mixture over top of fillets.

  2. Combine beans, corn, 2 tbsp cilantro, orange juice, 1 tsp chipotle, remaining garlic, tsp salt and tsp pepper in bowl. Lay four 14 inch legths foil on work surface. Divide bean mixture evenly over lower half of eachpiece of foil, then top with fish. Fold foil over fish, crimping edges to seal.

  3. Arrange packets in single layer on rimmed baking sheet and cook until fish is just cooked through 15-20 minutes.

  4. Carefully open packets and sprinkle with remaining cilantro. Serve.
