1.5 eggplant, peeled (yield from 1-1/4 lb) Eggplant
4 large Egg, White
4 serving Olive Oil
30 oz Tomato Sauce No Salt Added
12 oz Mozzarella Fresh Cheese
0.25 cup Sauce, Ready-to-serve, Salsa

Recipe Directions for Spicy baked eggplant

Use eggs (4) to fry the eggplant in olive oil and then layer in the mozzarella and fried eggplant with the tomato sauce and bake for 35 min at 400.
