Spicy Baked Egg Pie Recipe

Recipe Ingredients for Spicy Baked Egg Pie

1 small onion, finely diced
1 tsp. olive oil
1/2 tsp. ground cumin
1/4 tsp. chili powder
7 1/2 oz. tomatoes with juice
7 oz. black beans
4 oz. diced green chiles
2 eggs
10 egg whites
1/2 cup grated cheese (I used Four Cheese Mexican Blend, which is a blend of low-fat cheeses)
12 oz chicken breast
6 oz fat free sour cream

Recipe Directions for Spicy Baked Egg Pie

  1. Preheat oven to 450F

  2. Spray either one large casserole dish with olive oil or non-stick spray.

  3. Open black beans and drain into a colander placed in the sink, then rinse with cold water until no more foam appears. Let beans drain while you saute onions.

  4. Heat olive oil in a small frying pan with deep sides and saute onions about 2 minutes.

  5. Add ground cumin and chile powder and saute 2-3 minutes more.

  6. Add tomatoes with juice, drained beans, and diced green chiles to the pan with onions

  7. let cook at very low simmer about 20 minutes, or until the mixture is slightly thickened.

  8. Spoon the tomato-bean mixture in the bottom of the dish (use about half the mixture.) Carefully break the eggs on top of the tomato-bean mixture. Spoon the rest of the mixture around eggs, avoiding the yolk.

  9. Bake the casserole about 5-10 minutes, or until the eggs are starting to look set but are still fairly wet looking.

  10. Remove dish and change oven to broil (Be careful not to burn yourself!)

  11. Sprinkle cheese over the top and put dish back in

  12. close to the broiler for 2-3 minutes, or until the cheese has melted.

  13. Be sure to remove while egg yolk is still soft.

  14. Serve hot!
