You can add or subtract spices, as you like. I sometimes add other spices as well, to give it a curry-like flavor.

Recipe Ingredients for Spicy Baked Butternut with Apples

1 squash, winter, butternut
3 medium apples, cored, peeled and sliced
1/4 cup raisins (optional)
1 tbsp lemon juice
3/4 tsp ground cinnamon
1/4 tsp cumin (optional)
1/8 tsp cayenne (optional)
1 tablespoon brown sugar
1/2 cup unsweetened apple juice

Recipe Directions for Spicy Baked Butternut with Apples

  1. Peel, seed, and cut the squash into cubes (approx. 1").

  2. Place the squash, apples, and raisins in a 1-quart casserole dish coated with cooking spray or wiped with a small amount of canola oil.

  3. Sprinkle on the lemon juice and toss.

  4. Toss the mixture with the spices. Pour the apple juice over the mixture. Cover tightly and bake at 350 degrees for 1 hour or until the squash is tender.
