Recipe Ingredients for Spicy Bacon and Cheese Scones (Rachel Allen)

450 g plain flour
1 tsp bicarbonate of soda
1 tsp cayenne pepper
1 tsp salt
30 g butter, cold, cubed
110 g bacon, grilled, finely chopped
110 g cheddar cheese, finely grated
1 egg
375 ml milk

Recipe Directions for Spicy Bacon and Cheese Scones (Rachel Allen)

  1. peheat oven to 220C or 425F

  2. sift flour, bicarb of soda, cayenne and salt into large bowl. Add butter and rub in untilt he mixture resembles breadcrumbs, then mix in bacon and grated cheese

  3. whisk egg in another bowl and stir in the milk. pour this into the dry ingredients and mix to a soft dough using one hand ground around te inside of the bowl in one direction - do not knead

  4. roll the dough out on a lightly floured work surgace until it is 2cm thick, then cut into squares with a knife or into rounds with a plain cutter

  5. place on a floured baking tray and bake in the oven for 10-14 minutes until well risen and golden brown

  6. allow to cool on a wire rack
