Spicy asian style soup, add chilis to taste

Recipe Ingredients for spicy asian chicken soup

1 Yellow Onion
2 tsp olive oil
2 tsp toasted sesame oil
4 cloves garlic
3 cups carrots
3 tbls lemongrass
1 tbsp chili
2 tbls ginger root
1/2 cup lemon juice
150 grams swiss chard
2 zucchini
4 cups Soup, stock, chicken, home-prepared
0.76 lb boneless chicken breast
1 tbls Lemon Peel

Recipe Directions for spicy asian chicken soup

  1. dice onion, 1/2 carrots and 1/2 celery small

  2. chop other 1/2 carrot and celery in large pieces

  3. mince garlic, 1 stalk lemongrass, chili, ginger -mix together

  4. slice zucchini

  5. chop swiss chard

  6. cut chicken into roughly 1" cubes (keep chilled till use)

  7. heat olive and sesame oil

  8. add onion/carrot/celery dice saute until onion translucent

  9. add 1/2 garlic/lemongrass/chili/ginger mix

  10. add 1/2 lemon juice and 1/2 lemon zest

  11. saute until fragrant

  12. add stock bring to a boil, reduce heat to simmer

  13. add carrot, celery, zucchini pieces

  14. simmer 5-8 minutes till carrots almost ready

  15. add remaining lemon juice/zest/ garlic mix

  16. add chicken cook until no longer pink

  17. add swiss chard

  18. optional- serve with fresh basil and cooked noodles
