I also use black beans and you can also add minced garlic when cooking the onion 1 cup raw adzuki beans. You don't have to soak them, just cook over low heat for 1 1/2 hours. If they are soaked, cook for 45 minutes on low.

Recipe Ingredients for Spicy Adzuki Beans & Kale

1 cup adzuki beans
6 cups kale
3 tablespoons soy sauce
1 red onion, chopped
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon black pepper
2 tablespoons water
1 tablespoon olive oil

  1. chop the onion and saute in oil over low heat

  2. add kale and water and stir then add spices and soy sauce. cook for 10-15 minutes on low heat
