Recipe Ingredients for Spicey Vegie Lasagne in amazing tomato sauce

8 tomatoes
3 tbsp olive oil
300 g kidney beans,drained
3 tbsp flour
2 tbsp margarine, 37% fat
300 g can tomatoes
250 g zuccini,diced
1 onion
200 g lasagne
1/2 pint milk
2 cloves garlic
20 g green chilli pepper,diced
30 g fresh basil
1 tsp sugar
1 salt
1 pepper

Recipe Directions for Spicey Vegie Lasagne in amazing tomato sauce

  1. For the tomato sauce

  3. Cut the tomatoes in half and fit tightly into a baking tin in one layer.

  4. Tuck in 2 cloves of garlic,unpeeled

  5. Sprinkle with a little salt,pepper and sugar

  6. Drizzle with 2 tbsp of olive oil and them bake in a medium oven for 45-50mins

  7. Put the cooked tomatoes and any oil/juice into a blender with the basil and blend.

  8. Strain the tomato sauce and set aside.

  9. For the lasagne

  11. Put the remaining oil into a pan and gently fry the onions until soft

  12. Add the chilli,kidney beans and zuccini and cook for 1min.

  13. Add the can of tomatoes and simmer for 10mins.

  14. Meanwhile melt the margarine in a pan over a medium heat,once melted stir in the flour and leave to cook on a low heat for 2mins.

  15. Slowly add the milk a little at a time,stiring continuously with a wisk.

  16. Once it has formed a thick sauce,whisk until glossy and simmer for 2mins.

  17. Once the veg mix has simmered for 10mins, stir in the tomato sauce made earlier. Spoon 1/3 of the mixture into a large oven tray and cover with three sheets of lasagne.

  18. Layer the remaining lasagne and veg mix, and spoon over the white sauce before adding the final layer of lasagne.

  19. bake in the oken for 30mins and then serve.
