A wonderful, light carribean side. Microwave version is Quick & Easy!

Recipe Ingredients for Spicey Sweet Potato Dish

2 large potatoes, sweet peeled and cut into 1 inch cubes (about 4 cups)
1 tablespoons olive oil or canola oil
2 tablespoons brown sugar
1 teaspoon chili powder
1/2 teaspoon salt
3 tablespoons coconut, shredded sweet

Recipe Directions for Spicey Sweet Potato Dish

  1. In a zip-top plastic bag, toss potatoes and oil.

  2. Combine remaining ingredients;

  3. Add to bag;

  4. Toss all ingredients (except coconut) to coat.

  5. Transfer to a greased 11x7 inch baking dish.

  6. Bake, uncovered, at 400 degrees for 40-45 minutes or until potatoes are tender, stirring every 15 minutes (or microwave approximately 10-15 minutes, stirring every 5 minutes)

  7. Mash potatoes

  8. Top with shredded coconut
