very good black bean soup. it is not very thick but is still filling.

Recipe Ingredients for spicey black bean soup

2 tbls olive oil
1 medium onion, chopped
1 red pepper, chopped
1 jalapeno pepper, chopped
1 garlic cloves, minced
45 oz black beans, drained and rinsed
4 cups vegetable broth

Recipe Directions for spicey black bean soup

  1. heat oil in sauce pan over medium heat. add onion and peppers and cook for 3 mins or until softened. add garlic and cook 1 min more.

  2. stir in beans and broth and bring to a boil over high heat. reduce to med-low and partialy cover pot. simmer 30 mins.

  3. puree soup in batches in blender or with a wand.
